Quick and Easy Chicken Enchiladas

Introduction

These are quick and easy chicken enchiladas. This is a good way to use up leftover chicken. You can use canned enchilada sauce to make them even easier, but I like to use the Ten Minute Enchilada sauce from allrecipes.com. Ingredients

    25 oz skinless chicken breast, cooked and shredded
    4 c Ten Minute Enchilada sauce from allrecipes.com
    1.5 c shredded low fat cheddar cheese
    10 flour tortillas (8" diameter)

Directions

Preheat oven to 350 degrees F.

In a medium bowl, mix together chicken, 3/4 c cheese, and 1 1/2 c enchilada sauce. Pour approximately 1/4 c of enchilada sauce into the bottom of a non-reactive 9x13" baking dish, or enough to form a thin coat on the bottom. Spoon a small amount of the chicken mixture into a tortilla, roll tortilla, and place in baking dish. Repeat with the rest of the tortillas.

Evenly pour the remaining enchilada sauce over the rolled tortillas, making sure each enchilada has sauce on it. Sprinkle with remaining cheese. Cover with foil and bake for 35 min. Remove foil and bake an additional 10-15 min, until cheese is melted. Let sit 10 min before serving.

Makes 10 Enchiladas.
