Fajita Chicken Breakfast Casserole

Ingredients

    Chicken Breast, no skin, 8 ounces
    Old El Paso Fajita Seasoning Mix, 2 tsp
    Egg white, 1 serving
    Egg, fresh, 3 large
    Cottage Cheese, Nonfat, 12 oz
    Peppers, sweet, red, fresh, 1 cup, chopped
    Mushrooms, cooked, 0.5 cup pieces
    Spinach, frozen, 0.5 cup
    Cheddar Cheese, 0.5 cup, shredded

Directions

1. Cut chicken breast into thin strips, cover chicken in 2 tsps fajita seasoning, then place on a greased frying pan and cook until insides are no longer pink (about 5 minutes on medium/high)
2. Beat together eggs and egg whites
3. Add cottage cheese, peppers, mushrooms, spinach (thawed), and cheddar cheese to egg mixture
4. Shred fajita seasoned cooked chicken and add to egg mixture
5. Grease 9x13 casserole dish and pour mixture into dish
6. (optional) sprinkle cheese on top (not accounted for in nutritional information)
7. Cook at 350 degrees for 30-40 minutes (or until casserole is bubbling)
