Asian Tofu Salad

Introduction

Easy and very flavorful meal. This is my version of the $9 per pound Asian Tofu Salad found at Whole Foods (only much more frugal). Add other crunchy veggies if you like. Number of Servings: 4

Ingredients

    Sesame Oil, 1 tbsp
    Garlic, 1 tsp
    Ginger Root, 0.50 tsp
    Soy Sauce, 1 tbsp
    Thai Chili Sauce, 2 tbsp
    Tofu, extra firm, 1 block (drained and diced)
    Cabbage, fresh, 2 cup, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Peanuts, dry-roasted, 1 cup

Directions

Mix oil, garlic, ginger root, soy sauce, and chili sauce in medium bowl. Toss in cubed tofu and marinade for at least 1 hour.

Add veggies and toss to coat. Makes 4 generous servings. Sprinkle each portion with 1/8 c of chopped peanuts.

This is great served over cold soba noodles for a complete meal.
