Introduction

These pancakes come out very fluffy, unlike other whole wheat pancake recipes I've tried. They are excellent with chocolate chips, blueberries and other fruit, or just on their own. Ingredients

    3/4 c whole wheat flour
    3/4 c all-purpose flour
    3 T flaxseed, ground
    4 t baking powder
    1 T sugar
    1 1/4 c milk
    1 egg, lightly beaten
    3 T coconut oil

Directions

In a medium bowl, sift together dry ingredients. In another small bowl, whisk together wet ingredients. Make a well in the dry ingredients, add wet ingredients, and mix well. Cook on medium-high heat until medium brown.

Makes approximately 8 1/3 c servings
