1 lb Extra-Firm Tofu, rinsed and patted dry
1/2 c Red Pepper, finely chopped
1/2 c Celery, finely chopped
2-3 Tbs dairy-free mayo
2 Tbs Pickle Relish (your choice of sweet or dill; I prefer dill.)
1/4 tsp ground mustard (yellow would be fine)
1/4 tsp salt (fine ground)
1/4 tsp fresh ground black pepper
1/8 tsp turmeric

I just made this today and I'm not a tofu fan at all and I thought it was great! I chopped the tofu though so it looks like cubes of egg. Also used curry powder instead of tumeric and added onions...I add onions to everything. This one is going to be a staple in my house for protein snacks. - 1/9/08
