Easy Lemon Pepper Chicken

Introduction

This is one of the things my husband whips up on days I dont like to cook :) This is best after you've brined the chicken breasts for a couple of hours, but its not necessary. Number of Servings: 3

Ingredients

    3 boneless, skinless chicken breasts
    3 cups instant brown rice
    1 10 3/4 oz can of Cream of Chicken & Mushroom*
    2 cans of water
    Lemon Pepper Seasoning*
    *You can cut back on the sodium seriously if you purchase the low sodium and no salt versions of these. The only reason i used these was because they were what was left in my cabinet and i hate to waste lol

Directions

If you have time, brine the chicken in kosher salt and water for at least an hour before cooking. This helps it retain its tenderness juiciness while baking.

Preheat oven to 420 degrees

Pour the can of soup into a baking pan and then add the water and stir it up until the soupy portion is dissolved.
Then add the rice and stir it in, waiting for a few minutes for it to soak up some of the water.
carefully lay the chicken on top of the rice and then sprinkle the lemon pepper to taste over top of it all.
Bake uncovered for 20-25 minutes, slicing open the thickest part of a breast to make sure there's no pink left inside.

serve with veggies and even the kids will love it!!
