1 pound skinless tilapia fillets
1/2 cup flour
2 large egg whites beaten with 1 tablespoon water
1/2 cup plain dried breadcrumbs
1/2 cup grated Parmesan cheese
1/2 tsp salt
Cut the tilapia fillets into 1x2-inch strips. Pour the flour into one shallow dish. Beat the egg whites with water in another shallow dish.
Combine the breadcrumbs, Parmesan and salt in a third shallow dish. Dip the fish strips in the flour first, then in the egg white mixture, then in the breadcrumb mixture. Pat the breadcrumb mixture into the fish and lay coated strips on the baking sheet.
Bake for 5 minutes, then turn the strips once and bake for another 5 minutes - or until the fish is crusty, golden-brown and cooked through. Serve with a squeeze of fresh lemon
