This Hoppin' John recipe was adapted from several different ones I found in cook books and on the internet.Gimme Lean Sausage is fat free and tastes amazing. Using Shiratki noodles instead of rice decreases the calorie count even further and provides huge filling portions. Ingredients

Gimme Lean Sausage Style 4 ounces
olive oil 1 tablespoonful
onions, chopped 1 cup
celery diced 1 cup
green bell pepper, chopped 1/2 cup
Cowpeas (black-eyed beans) 6 cups cooked either canned and rinsed or you can make your own from dried to reduce sodium
tobasco sauce to taste
salt to taste
bay leaf- whole or crumbled
veggie bouillon cubes (to make ~ 2 cups broth) optional
thyme 1 tsp dry or 1 tbl fresh
Shirataki orzo shaped pasta
Directions
Cut the Gimme Lean sausage into slices and in a non-stick or cast iron dutch oven or deep frying pan brown over medium heat for 5 minutes in olive oil turning once. Use spatula to chop sausage into pieces. Add the bell pepper, celery and onion to the sausage and saute until the veggies are crisp-tender, about 10 minutes more. Add black-eyed peas, water and optional bouillon, bay leaf and thyme. Season with tobasco sauce and salt if desired. Simmer about 20 minutes. Mash the black-eyed peas a bit to thicken, remove bay leaf if whole and serve over shirataki noodles.
