"Healthy" cornbread

Number of Servings: 12

Ingredients

    1 cup of yellow cornmeal
    1 cup of whole wheat flour
    1/2 cup of nonfat milk
    1/2 cut of lowfat buttermilk
    4 teaspoons baking powder
    1 teaspoon salt
    1/2 cup water
    2 tablespoons plain nonfat yogurt
    1/3 cup brown sugar
    1/3 cup honey (you can also use agave nectar)
    1 large egg (beaten)

Directions

This recipe makes one 9 inch round cake pan - I prefer to cut this into 12 peices

Preheat the oven to 400 degrees
Grease a 9inch cake pan
Mix together the lowfat buttermilk with the lowfat milk
Add the cornmeal to the milk mixture and soak for 15minutes.
In a large bowl combine the whole wheat flour, baking powder, brown sugar and salt.
In a separate bowl combine the honey, egg, yogurt and water.
Add the wet ingredients to the dry ingredients
Pour the batter into the prepared 9inch cake pan
Bake for 20-25minutes (or until a toothpick comes out clean)
