Mediterranean Veggie Wrap



Introduction

This is healthy veggie wrap with a Mediterranean twist. You can use more or less veggies depending on the size tortilla you use. Kalamata olives are also a nice addition if you use a fat free or low calorie greek dressing. Enjoy! This is healthy veggie wrap with a Mediterranean twist. Ingredients

    1 Whole Wheat Tortilla
    2 Tbls Tahini Hummus
    1/4 sliced Cucumbers
    1/4 sliced/shredded Carrots
    1 medium sliced Red Onion
    1 medium sliced Mushroom
    1/4 fresh Spinach (about 4-6 leaves depending on size)
    1oz fat free or reduced fat feta cheese
    2 Tbls fat free or low calorie Italian or Greek dressing (your preference)

Directions

This makes 1 serving. Very easy to prep and make. Slice/chop vegetables to your liking, spread hummus on whole wheat tortilla, sprinkle feta cheese over hummus, place spinach leavers over feta cheese, follow with remaining vegetables, and top off with dressing. Roll filled tortilla up and enjoy! Sometimes I throw the wrap into the microwave for a few seconds to let the cheese "ooze" into the rest of the ingredients....so good!,

  • Oldtowngym -My recipe was added 3 times b4 I saved it. Something screwed up the nutrition even after I deleted the extra posts. I use only 1 tablespoon of hummus, ital dress, and chz. That may have something to do w/the sodium level on the chart being so high. Sorry for the mishap. Hope you enjoy! - 8/19/10
