Baked Oatmeal

Introduction

A great breakfast or brunch treat!! A great breakfast or brunch treat!!
Number of Servings: 6

Ingredients

    1/2 cup of melted butter
    3/4 cup brown sugar (I use Sucanat)
    3 cups rolled oats
    1.5 cups plain low fat yogurt
    1 tsp cinnamon
    NEXT DAY ADD:
    2 eggs beaten
    2 tsp. baking powder
    1 tsp salt
    1/2 cup dried raisins/or 1-2 tart apples chopped (optional)

Directions

Mix together butter, sugar, oats, yogurt and cinnamon in a glass mixing bowl. Cover and leave on counter over night. Next day add eggs, baking powder, fruit and salt. Bake in a greased 11x7 baking pan at 350 degrees for 25-30 minutes. Top with chopped nuts, ground flax seeds, yogurt, warmed milk, or other topping of your choice.
