Introduction
This is a vegetarian recipe that most Greeks will recognize. It is a staple in greek cuisine. Easy to make and a simple way to get some veggies into your day! Ingredients

1 lb fresh green beans
2 tbsp olive oil
1/2 cup chopped onion
3 medium potatoes, peeled, and cut into 4-6 wedges or cubes
2 tbsp tomato paste
1 1/2 cups fresh or canned tomatoes (if fresh, should be very ripe)
Salt & Pepper to season
Directions
Wash and clean beans, cutting off tough ends, and cutting in half if pieces are too long.
Heat oil in a large pot. Add onion and sauté until translucent. Add beans, and stir to coat. Add water & tomatoes. Bring to a boil, reduce heat to a simmer. Cover and let cook for 20 minutes, stirring occasionally. (You may need to add more liquid to the pot, so check often)
Add tomato paste, potatoes, and seasoning. Continue cooking for 20 minutes. Serve warm.
