Salmon Tomato Pasta

Ingredients

    3 cloves garlic, squished
    1 to 2 tbsp olive oil
    1 28 oz can tomatoes
    1 6-1/2 oz can salmon, drained
    1/2 tsp dried oregano
    1/2 tsp dried basil
    1/2 tsp red pepper flakes
    1/2 tsp salt
    1 tbsp capers (optional)
    1 300 g box of your favorite whole grain pasta, cooked according to package directions

Directions

In a large skillet, saute the garlic in the olive for a couple of minutes, until softened. Dump in the tomatoes, juice and all, and mash them with a fork or a potato masher. Add the salmon, seasonings, and capers, and stir. Bring to a boil, then lower the heat and simmer for about 15 minutes.

While the sauce simmers, cook the pasta. When the sauce is ready and the pasta has been cooked and drained, toss them together in the pasta pot, and serve.

Nutritional info includes the pasta and 1 tbsp of oil.
