Low-Fat Poultry Meatballs

Introduction

Half turkey, half chicken! Ground turkey is often suggested as a lower-fat alternative for meatballs instead of beef, and ground chicken is generally ignored because it doesn't have enough fat to really hold together as a meatball. I balanced both advantages (the even-lower-fat chicken and will-stick-together turkey) and combined the two, seasoning them for poultry. They stay together nicely and are lower in fat than all-turkey meatballs - not to mention that they taste great! This makes a ton of meatballs - plenty to freeze and reheat in the oven for 15 minutes from frozen on a busy night. Half turkey, half chicken! Ingredients

    1 kg (2.2 lbs) ground turkey
    1 kg (2.2 lbs) ground chicken
    4 eggs
    1 1/3 cups bread crumbs
    2 tbsp garlic powder
    1 tbsp onion powder
    2 tsp oregano
    2 tsp sage
    1 1/2 tsp paprika

Directions

Place all ingredients in a large bowl and mix well with your hands until the eggs and dry ingredients are well-distributed in the meat. Form into meatballs and bake at 350 F for 20-25 minutes, turning once.

Makes 130 meatballs total. One serving of the recipe is listed as one meatball approximately 2 cm (3/4") in diameter, so no matter how many you make, the serving size should be correct and flexible, since all you need to do is enter the number of meatballs you ate as the serving number. If making less, just adjust down the amounts of bread crumbs, eggs, and spices appropriately and the serving size should still work out nicely.

  • These meatballs are fantastic. I do not add the sage, oregano or paprika. I added worchestershire sauce instead. They are good covered in a low sugar teriyaki sauce or my Luanne's Spaghetti Sauce recipe minus the meat! Yum! - 8/15/11
