IntroductionSweet and spicy chicken dish. Sweet and spicy chicken dish.
2 (6 oz each) Boneless, skinless chicken breasts
3 1/2 TBSP Sugar Free Orange Marmalade
1 TBSP Fresh Chives, chopped
1 TBSP Rice Vinegar
5 tsp Sriracha sauce
1/2 TBSP Extra Virgin Olive Oil
1/4 tsp Black pepper
Line a baking dish with foil and then spray with nonstick cooking spray.
Mix marmalade, chives (or chopped green onion), rice vinegar, and Sriracha sauce. Stir until well combined. Reserve 1/8 cup of mixture.
Brush chicken breasts with olive oil and season with black pepper. Place in prepared baking dish.
Brush chicken with 1 TBSP of marmalade mixture.
Cover baking dish with foil and cook chicken - brushing with marmalade mixture every 10-15 minutes - for 25-30 minutes
Uncover dish and cook 10-15 more minutes or until glaze thickens and chicken is cooked through.
*NOTE: You can use apple jelly, mango jam, or pineapple jelly in place of the orange marmalade.
