Shredded Chicken

Introduction

Great for sandwiches or served over rice. I like to get a rotisserie chicken from the grocery store so I don't have to spend the time cooking a chicken. Great for sandwiches or served over rice. Number of Servings: 5

Ingredients

    1 cooked chicken, skin and bone removed
    3 cups chicken broth
    1.5 tbsp corn starch
    1/2 tsp chicken bouillon
    1/2 tsp poultry seasoning
    pepper, to taste

Directions

Stir corn starch into broth until dissolved. Pour into saucepan and heat to boil over med-high heat. Boil until thick. Add bouillon and seasoning and stir to dissolve.
Meanwhile, shred chicken.
Add to thickened sauce and stir. Reduce heat to med-low and simmer until thick and heated through.
(Sometimes I have to adjust the cornstarch for better thickening. In that case, just dissolve more in cold water and stir into hot mixture.)
Serve over rice or on buns.
Makes 5 1-cup servings.
