Vibrant Veggie Stir-fry Medley

Introduction

Lotsa' yummy veggies! Eat alone, or serve with a side of brown rice and / or beans (higher carb), or a nice juicy chicken breast (low carb) for a more well-rounded meal! Ingredients

    * 1 tbsp. Olive Oil
    * Fresh ground Black Pepper, to taste (((NOT included in tracker - and don't add salt at this point because you'll be adding lots of sodium with the sauces!!!)))
    * 375 g Mushrooms, fresh, chopped (18 average-sized white mushrooms +/-)
    * 330 g Orange Bell Peppers, chopped (2 average-sized peppers, +/-)
    * 250 g Red Bell Peppers, chopped (2 small peppers, +/-)
    * 560 g Baby Zucchini, chopped (3 larger-sized baby zucchini, +/-)
    * 1 cup Waterchestnuts slices (1 small can)
    * 225 g Baby Corn, canned / drained (1 can)
    * 2 tbsp. HOT tap Water
    * 2 tbsp. Kikkoman Teriyaki Sauce & Marinade
    * 2 tbsp. Kikkoman Soy Sauce
    * 1 tbsp. Corn Starch

Directions

1. In a large wok, heat the olive oil over medium-high heat. Addd some fresh-ground black pepper if you like.
2. Add the veggies, starting with the mushrooms - then adding the peppers - then adding the zucchini - and finally adding the canned baby corn and waterchestnuts, and stir-fry until tender-crisp. Reduce heat to medium-low.
3. In a small bowl, mix the hot water, soy sauce, teriyaki sauce, and corn starch. Whisk to incorporate. Pour over the veggies in the wok, and stir rapidly until heated through / thickened.
4. Makes 8 generous / heaping cups of veggie medley. Enjoy! :)
