    1/2 cup quinoa soaked and cooked
    2 cups fresh parsley coarsely chopped
    8 grape tomatoes seeded and chopped
    3 TBSPN EVOO
    salt/pepper to taste

Directions

Soak and Cook quinoa
mix all ingredients together
chill and serve
