Quick and easy potato salad Quick and easy potato salad
Number of Servings: 4

Ingredients

    2 med size red potatoes - cooked - diced - chilled
    2 large hard cooked eggs
    2 green onion / scallion - chopped
    1/4 cup mayonaise
    3 small radish
    Salt & Pepper to taste.

Directions

Cook new red/white potatoes in skins - chill.
Cook eggs - peel shell - chill

Dice potatoes, add chopped onions, mayonaise, chopped raddish - mix well - slice chilled eggs and gently mix in.
