Pasta with Spinach, Feta, and Tomatoes

Introduction

Number of Servings: 4

Ingredients

    2 cups chopped tomatoes
    2 cups spinach
    1 Tbsp Balsamic vinegar
    1 Tbsp olive oil
    1/2 cup cubed feta
    fresh basil lelaves
    4 cups Cooked Pasta

Directions

1. Cook pasta
2. While it cooks, chop tomatoes, basil, and spinach. Put in bowl. Add drained feta.
3. Add vinegar and oil to ingredients in the bowl.
4. When pasta is done, drain it and serve.

Serve 1 cup of vegetable mix on top of 1 cup of pasta.
Serves 4.

If you prefer to use just 1/2 cup of pasta and 1 cup of topping, you will have 1oo fewer calories per serving, and 3 less grams of protein.
