Tamz Mediterranean Quinoa Salad

Ingredients

    Sundried tomatoes (no oil), 1/2cup
    Italian Season Mix, Dry, 1.5 tsp
    Salt, .5 tsp
    Garlic powder, 1 Tbs
    Olive Oil, 1 Tbs
    balsamic vinegar, 3 Tbs
    Imagine Organic, No-Chicken Broth, 1/4 cup
    Pepperoncini - 1/2 cup
    Black beans 2 cup
    Quinoa, 3 cup
    Kalamata olives, sliced- 2 oz.
    Diced red onion, 1/2 cup
    Marinated Artichoke Hearts, 1 cup

Directions

Precook beans and quinoa, allow to cool before mixing all ingredients together.

Mix spices and liquids together to create a dressing before adding remaining ingredients.

Add all items in a large bowl. Toss to coat thoroughly with dressing. Refrigerate 1-2 hours prior to serving.

Makes approximately 14, 1/2 cup servings.
