Catherine's Veggie Pasta Sauce

Introduction

Fantastic veggie pasta sauce with shredded zuchinni, frozen chopped spinach, a giant can of chopped tomatoes and fresh herbs.

I used what needed trimming in my herb garden: basil, parsley and a little rosemary.

I also added a LOT of dried pepper flakes.

Number of Servings: 4

Ingredients

    2 zuchinni, shredded
    1 C or so of frozen chopped spinach
    Quorn crumbles - about 2 servings worth
    chopped garlic
    large can of chopped tomatoes

    Fresh herbs - basil, parsley, a little rosemary if you have it.
    If you don't have fresh, substitute Italian seasoning, or oregano, basil and parsley.

    Red pepper to taste

Directions

Shred the zuchinni -- must do this! It's what makes it good! I don't peel them or anything - just wash and shred.

Add the olive oil to a big frying pan, warm up, then add garlic, zuchinni and spinach. Cook down at a medium high heat. They'll reduce.

Once this seems almost cooked, add the fresh herbs and red pepper. Turn down to low and simmer for awhile - maybe 15-20 minutes.

I add meatballs for my meat-eat husband, and serve over pasta with parmesean cheese or whatever I have on hand.

Also fantastic on brown rice for leftovers!
