IntroductionCreamy risotto with no added cream, using brown rice and Cremini mushrooms. Creamy risotto with no added cream, using brown rice and Cremini mushrooms.
Cooked brown rice - 3 cups
mushrooms - sliced, 5 medium plus stems, diced
onions- diced 1/3 cup
chicken broth 2 cups
white wine 1/3 c.
olive oil 1 T
Heat oil; saute onions with mushtoom stems until onions caramelize. Add white wine and cook for about a minute until alcohol evaporates. Add brown rice to onion mixture. Add 2/3 of chicken broth and mushroom slices and cook down liquid on simmer; add more broth as needed until all broth used up, Cook down until mixture is creamy and thick.
