Chocolate No Bake Cookies - Low Fat

Introduction

I got the original recipe from this site and made a couple of alternations. They are delicious! Caution - watch the carbs they add up quick if you are a cookie popper and can't stop with one. I got the original recipe from this site and made a couple of alternations. They are delicious! Caution - watch the carbs they add up quick if you are a cookie popper and can't stop with one.
Number of Servings: 40

Ingredients

    3 cups oatmeal
    2/3 cup reduced fat peanut butter
    1 cup Splenda Sugar Blend (you must use the blend)
    8 tbsp Fat Free Promise
    1/2 cup Fat Free Milk
    1/3 cup dry cocoa powder
    2 tsp vanilla extract

Directions

Lay out wax paper for dropping cookies on, or use a lined cookie sheet.

Pre-measure oats and peanut butter and set aside for later use.

Combine sugar, butter, milk, and cocoa in pot and cook over medium/high heat. Stir constantly. Mixture will thin and then come to a rolling boil.

Remove from heat.

Add vanilla, peanut butter, and oats. Stir until well mixed and peanut butter has melted.

Drop onto wax paper by the tablespoon full or pour into lined cookie sheet. If pouring into cookie sheet, allow mixture to cool and then cut into squares.

Makes approximately 40 - 1 tablespoon servings.
