Sausage Bean Skillet

Number of Servings: 6
14 oz sliced smoked turkey sausage (or other sausage)
4 stalks celery, sliced
1 onion, chopped
2 cloves minced garlic
3 cups cooked beans, any kind (2 - 15 oz cans) - I used white beans
1 Tablespoon honey
15 oz can tomato sauce
Might be able to stretch this out into 7 or 8 servings if serving over rice.
First get out a large skillet. In it fry the turkey sausage until it is brown around the edges. Add the celery, onion, and garlic. Stir and cook over medium high heat until the onion is translucent (almost see-through) and tender. Add the beans, and tomato sauce. Add a little tap water too, if you think it's necessary. Swirl the water around in the tomato sauce-can to get the last of it's goodness into the skillet. Simmer the whole thing for 10 to 20 minutes. Serves 6.
