Black Bean Stuffed Peppers

Ingredients

    4 Lage Peppers
    1 15 oz can black beans
    1.5 c cooked white rice
    3 slices bacon, crumbled
    .75 c chopped onions
    2 oz reduced fat Sargento mozzarella cheese
    3 cups zucchini diced
    3 cups Hunts garlic & herb spaghetti sauce

Directions

Pre-heat oven to 350. Core peppers. Cook rice, bacon, & saute onions in bacon grease. Mix beans, rice, bacon, onions & zucchini thoroughly. Stuff peppers. Pour 1.5 cups spaghetti sauce into baking dish, arrange peppers, pour sauce over peppers, & top each pepper with 1/2 oz. cheese.

Bake for 40-45 minutes.
4 whole pepper servings.
