Teriana Lean Beef Chili

Introduction

Ingredients

    1 lb. extra lean ground beef
    1/2 fresh yellow onion, diced
    4 small cloves garlic, minced
    1 fresh jalapeno pepper, seeds removed, minced
    4 TBS chili powder
    1 tsp. ground cumin
    1 C medium or hot salsa
    1 14.5 oz can diced tomatoes
    1 8 oz. can tomato sauce
    1 16 oz. can kidney beans, rinsed and drained
    1/2 cup water

Directions

Brown ground beef in a non-stick skillet or use cooking spray. When brown, drain and transfer to a pot, breaking beef into small morsels. On medium heat, add chopped onion, garlic and jalapeno and cook until onions are transparent, about 5 minutes. Add chili powder and cumin, salsa, diced tomatoes and tomato sauce. Combine and adjust spices to taste. If you like a spicier chile, add cayenne pepper. Rinse and drain kidney beans and add to the tomato/beef mixture. Add 1/2 cup water to thin. Reduce heat to low and simmer for 45 minutes. Taste and adjust seasoning with salt, pepper, garlic powder if desired. Optional toppings include diced raw onion, grated cheddar cheese and/or crushed soda crackers.
