Black Bean Salad

Introduction

Summer salad Summer salad
Number of Servings: 5

Ingredients

    2 C cooked brown rice
    2 C black beans, drained and rinsed well if canned
    1 C salsa, mild, medium or hot (it's up to you!)

Directions

1. Cook brown rice and allow to cool.
2. Mix rice, black beans and salsa together.
3. Refrigerate.
Serve hot or cold: as is, over lettuce/greens, w/ sour cream, guacamole, chopped tomatoes, avocado, onion, etc. Let your creative spirit be your guide.
Serv. approx 1 C
