Chicken/Turkey Veggie Saute

Ingredients

    2 tsp olive oil
    1 lb lean ground chicken or all-white-meat ground turkey
    1/2 cup sliced mushrooms
    1/4 cup white wine
    2 cup frozen mixed vegetables, thawed
    1/2 tsp dried oregano
    Salt and pepper
    2 cups Brown rice

Directions

Directions
Cook brown rice or whole-wheat pasta.
Rub oil in a heavy skillet.
Brown chicken or turkey over medium-high heat with mushrooms (5 to 7 minutes); deglaze pan with white wine.
Stir in vegetables, oregano and salt and pepper to taste.
Heat through; serve over rice or pasta (nutrition figured with 1/2 cup brown rice per serving).
