Aarti's Party Massaged Kale Salad

Number of Servings: 4

Ingredients

    1 bunch kale (black is best)
    1 lemon
    1/4 c evoo
    2 t honey
    1 cup diced mango
    2 T pepitas (pumkin seeds)

Directions

1. Strip kale off stems. Roll like cigar and slice to make ribbons.
2. Add juice from 1/2 lemon, drizzle of evoo, and dash of salt. Massage 2-3 minutes, until kale starts to dissolve. Set aside.
3. In small bowl, whisk honey, juice from rest of lemon, and generous amount of black pepper. Stream in 1/4 c evoo. Taste as you go along.
4. Pour dressing over kale. Add mango and pepitas. Toss
