Vegetarian Chili - Eat Clean

Ingredients

    2 Tbs cumin
    2 Tbs olive oil
    1/2 C chopped onion
    1 C green pepper chopped
    1 large carrot chopped
    1 teas garlic
    3 Tbs chili powder
    1/4 teas red pepper
    2 C red kidney beans - dry
    1 C great northern beans-dry
    1 C black beans-dry
    1 can whole kernel corn
    2.5 C low sodiul vegetable broth
    2 teas oregano
    2 teas basil
    2 cans S&W organic diced tomatoes (14.5 ea.)
    juice from 1 lime
    juice from 1 lemon

Directions

Cook beans rinse and cool. Meanwhile saute onion, carrot, and pepper. Stir in chili powder, cumin, red pepper. Cover and cook on low heat for 10 minutes. Add all remaining ingredients. Blend well. Cover and simmer for 20 minutes.
