Pistachio Pineapple Pudding

This is a healthy adaptation to the "Watergate Salad" of old. It's a delicious, refreshing treat if you like pistachio pudding. Ingredients

1 pkg. sugar free, fat free pistachio pudding (4 servings)
1 cup whipped topping, frozen, low fat
2 containers low carb yogurt, vanilla (2 servings)
1/4 cup walnuts, chopped (optional, but calculated in nutritional values)
2 tbsp unsweetened, shredded coconut (optional, but calculated in nutritional values)
1-3/4 cup crushed pineapple in 100% juice, no sugar added
Directions
Blend together pudding mix, yogurt, and crushed pineapple with juice until pudding mixture is well dissolved.
Gently fold in whipped topping, nuts and coconut.
Chill and Serve - 1/2 cup servings
Adaptations:
I use 2 cups of yogurt (my wonder-food), and 1 cup of whipped topping. This makes for a wonderfully creamy texture, and packs in better nutrition for my goals. The traditional "fluffy" texture of "Watergate Salad" requires 2 cups whipped topping and one cup of yogurt.
The nuts and coconut are totally optional, but add a bit of fiber, and protein.

Sounds great, my mother in law makes one every Christmas Eve, we call it "green Stuff" its a bit different of a recipe, we also add a can of manderin oranges drained to it. No yogurt.. Just the crushed pineapples, whipped cream, can use no fat, low fat or sugar free. Any kind you want. Its so light - 10/22/09
