Rachel Ray's Sausage Stoup

Introduction

Number of Servings: 10

Ingredients

    2 Tb Extra Virgin Olive Oil
    1 Large yellow onion diced
    1 large clove of Garlic, minced
    1 Lb bulk sausage
    2 lg carrots, diced
    6 c chicken stock (or broth)
    2 cans cannelini beans (1 can mushed up)
    2 large potatoes, diced
    2-3 broccoli crowns, chopped

Directions

1. Heat Olive Oil in a big soup pot (dutch oven, preferably). Sautee onions and garlic until transluscent.
2. Add sausage. Cook until brown.
3. Add chicken stock and carrots. Bring to a rolling boil.
4. Add can of mushed-up cannelini beans, potatoes, and broccoli. Simmer.
5. When potatoes are tender-crisp, add remaining cannelini beans and heat to temperature. Serve with bread and/or salad. Makes approximately 10 1-cup servings.
