My Homemade Chicken Noodle Soup m/w Whole Wheat Pasta My Homemade Chicken Noodle Soup m/w Whole Wheat PastaNumber of Servings: 20
Ingredients

Chicken Broth, Low Sodium, 2 qt.
Water, 4 cup
Chicken Breast, no skin, 16 ounces
Canola Oil, 2-4 tbsp
Onions, raw, 4 medium (2-1/2" dia)
Carrots, raw, 6 medium
Celery, raw, 6 stalk, small (5" long)
Basil, fresh, 0.5 cup
Garlic, 6 cloves
100% Whole Wheat Rotini (or pasta of your choice) (Dry), 2 cups
Directions
1. Bring broth and water to a boil. Reduce heat and simmer.
2. Cook up chicken and cut into bite size pieces. (I boil my chicken to keep it moist and reduce fat used.)
3. Heat oil in a saute pan. Add carrots, celery, onions and garlic - saute until veggies are nearly soft. Add chicken.
4. Add veggies and chicken mixture to broth. Add herbs of choice to soup. Simmer about 10 minutes.
5. Add pasta to soup and cook until pasta is tender.
Super easy, healthy and yummy!
