Introduction

Ingredients

    1 large purple onion, finely chopped
    6 - 8 large tomatoes, seeded and chopped
    3 Tbs. minced garlic
    3 Tbs. seeded and chopped red chili peppers
    3 Tbs. seeded and chopped jalapeno peppers
    1 tsp. ground cumin
    2 tsp dry cilantro
    1 tsp lime or lemon juice
    1 Tbs cidar vinegar (5% acidity)
    1/4 tsp salt
    1/2 tsp ground black pepper
    1 tsp sugar

Directions

Makes 16 1/2 cup servings (2 quarts)
Combine all ingredients and pack in quart jars. Refrigerate overnight prior to use. (This must be kept in the refrigerator until used. It will last up to 2 weeks)
