Introduction

Healthier version of a Southwestern favorite! Healthier version of a Southwestern favorite!
Number of Servings: 12

Ingredients

    1 cup jicama, peeled and cut into finger sized sticks
    1 medium red bell pepper, sliced into strips
    1 large zucchini, sliced
    4 stalks celery, cut into 4" sticks
    1 1/2 cups shredded pepper jack cheese
    2 Tbsp canned diced green chilies
    2 Tbsp sliced black olives

Directions

Prep and arrange veggies on microwave-safe plate. Sprinkle evenly with cheese, chilies and olives. Microwave 2-5 minutes on medium high until cheese melts.
