Phyllo Berry Cups

Introduction

I made this dessert with berries I had on hand and Phyllo that i had in the freezer.

The number of servings will depend on the size of the squares you cut and the size of your muffin tins.

The phyllo can also be cut into flat squares or triangles and the dessert can be presented stacked as a napoleon.

It can also be done without the lemon curd or without the berries, for that matter.

Ingredients

    Phyllo Dough, 20 sheet dough
    Olivio, Olivio Buttery Spread, 5 sprays, 12 serving
    Trader Joe's Lemon Curd, 12 tbsp
    Blueberries, fresh, 1 cup
    Splenda, 2 tsp

Directions

Clean, hull and slice the strawberries

Wash and de-stem the blueberries

Mix in a bowl with approximately 1 tsp sugar and the balsamic vinegar

Take one sheet of phyllo at a time; spray sprinkle a tiny amount of sugar substitute and stack four layers.

Cut into quarters, and place into muffin tins

Bake at 350 degrees F. for 8 to 10 minutes

Assemble the tarts, placing lemon curd on bottom, then fruit mixture and finishing with whipped cream or topping, if desired.
