Introduction

I am gluten free and have developed a real love of quinoa. This is an easy salad that I can throw together at last minute the evening before heading to the beach the next day. I find the salad lasts in the fridge for 5-7 days. I am gluten free and have developed a real love of quinoa. This is an easy salad that I can throw together at last minute the evening before heading to the beach the next day. I find the salad lasts in the fridge for 5-7 days.

Ingredients

    quinoa, black beans, sweet red pepper, jalepeno, carrot, cilantro, lime juice, olive oil

Directions

Prepare quinoa as directed. I rinse well and saute in oil spray to bring out the nutty flavor of the quinoa. Once quinoa is cooled, add the remaining ingredients and chil at least for several hours.
