Introduction

Excellent as a spaghetti sauce, this recipe makes 8 servings, enough to freeze away for a quick nutritious meal during the middle of a busy week. This recipe was developed on the fly after I had already prepared the shrimp to be added to jarred spaghetti sauce, only to discover that we were out. Ingredients

    5 T Olive Oil
    4-6 cloves Garlic
    2 T Oregono
    1 tsp Basil
    2 lb Shrimp
    4 14.5 oz cans Hunt's diced tomatos
    1/4 tsp onion powder
    2 tsp Spatini
    2 T Cornstarch

Directions

In a large pan, combine and stir olive oil, garlic, oregeno, and basil in pan over a medium high heat until seasonings are fragrant. Add raw shrimp and cook until shrimp are firm. Add the tomatos, onion powder, and Spatini and mix. Remove a portion of the juices. Add the cornstarch to the juices and mix thoroughly and then add mixture back to the shrimp and tomatos. Simmer for 10-20 minutes.

  • How many servings does this make? It says 1, but I find that hard to believe with 4 cans of tomatoes in the ingredients. - 8/25/10

    This is the first recipe that I have ever entered and I screwed up in entering it. There are 8 servings when made as followed. I will tell you that I forgot to add in the Spatini to the nutritional info so the sodium content is low.
