Ingredients

    2 tbsp fresh chopped basil
    1 tbsp curry powder
    414 ml coconut milk (liquid from grated meat +water), canned
    1 carrot(s) carrots, raw
    1 cup edamame
    1 cup kale, raw
    1 block tofu
    1 tsp sweets, sugars, brown
    2 tbsp coriander (cilantro), raw
    juice from one lime

Directions

1. Combine basil, curry paste and coconut milk over medium high heat, stirring well to mix curry paste.
2. Add remaining ingredients and bring to a slow simmer. Cover and cook for 10-12 minutes.
3. Serve over rice if desired.
