Chocolate Cupcakes & Cream Cheese Frosting

Ingredients

    1 18.25 oz pkg chocolate fudge cake mix
    1/4 cup vegetable oil
    12 oz. lowfat vanilla yogurt
    1 1/2 tsp vanilla
    3 large eggs

    Frosting:
    4 oz. light cream cheese, softened
    2 tbsp. butter, softened
    1 cup powdered sugar
    1 tsp vanilla

Directions

Preheat oven to 350. Line 2 muffin pans with paper liners. Set aside. Combine cake mix, oil,
yogurt, 1 1/2 tsp vanilla and eggs in a mixer bowl. Beat thoroughly according to pkg. directions. Divide in prepared pans. ( I use an ice cream scoopful for each cup). Bake 18-20 min or until tested done with toothpick. Cool 5 min, remove from pan, finish cooling on rack. Meanwhile prepare frosting: In small bowl, combine cream cheese and butter; beat until smooth.Gradually beat in powdered sugar and vanilla.

  • These were amazing! If the calorie count is true they are totally worth it! I ran out of frosting for the last 4 cupcakes though so be aware of how much you are putting on so it covers all 24 :) - 2/6/12

  • I made the frosting for a cake - and the frosting was the best part! Creamy and rich with out being super bad for you. A great treat. I added cocoa powder, but it didn't taste very chocolatey. Maybe some melted baker's chocolate would have been better. Thanks for sharing! - 3/18/08
