Chicken Almond Casserole

Introduction

Ingredients

    4 c. cooked chicken, cut up
    1 c. diced celery
    1 sm. onion
    1 pkg. slivered almonds
    1/2 c. raw rice
    1 c. mayonnaise (I used Kraft Olive Oil Mayo)
    1 can cream of chicken soup (I made my own instead of using canned--1 T. marg, 3 T gluten-free flour, .5 c. milk, salt, pepper, and .5 c. chicken broth)
    1 sm. can water chestnuts
    Salt & pepper

Directions

Mix all ingredients together and spread in oblong casserole.
Sprinkle on top with crushed potato chips (if desired). Bake 1 hour at 350 degrees.

  • While this didn't go over well with my kids (picky eaters...they don't like anything with "flavor"), my husband definitely gave it a thumbs up, but asked that I replace the celery with peas next time. Just a personal preference. Easy one dish meal that I will be making again! - 5/10/11
