Ingredients

4 c. cooked chicken, cut up
1 c. diced celery
1 sm. onion
1 pkg. slivered almonds
1/2 c. raw rice
1 c. mayonnaise (I used Kraft Olive Oil Mayo)
1 can cream of chicken soup (I made my own instead of using canned--1 T. marg, 3 T gluten-free flour, .5 c. milk, salt, pepper, and .5 c. chicken broth)
1 sm. can water chestnuts
Salt & pepper
Directions
Mix all ingredients together and spread in oblong casserole.
Sprinkle on top with crushed potato chips (if desired). Bake 1 hour at 350 degrees.
