Cottage Cheese Scramble

Introduction

This scramble is a great alternative to just simple scrambled eggs and the cottage cheese provides calcium! Egg whites or egg substitutes, low fat or non-fat cottage cheese may be used along with PAM or other cooking spray to dramatically cut fat calories. Mrs. Dash helps to add flavor if you need to avoid salt. This scramble is a great alternative to just simple scrambled eggs and the cottage cheese provides calcium! Ingredients

    2 large eggs
    1/4 cup of cottage cheese (non-fat or low fat may be substituted)
    1 wedge of a small onion, chopped (about 1/4 cup)
    1/2 a tomato, diced (about 1/4 cup)
    1 pat of butter (PAM may be used as a substitute)
    Salt and pepper to taste

Directions

In a bowl beat eggs and cottage cheese until bubbly. *Add about a tablespoon or two of water to make eggs lighter. In a non-stick pan, melt butter then add onions and tomato. Cook one minute then add egg mixture. Allow edges to firm. Add salt and pepper. Scramble as desired.
