Saffron Yellow Rice - 10oz.
Canned Tomatoes (Mexican Style) - 1 can
Cooked Shrimp - 1/2 lb.
Lean Ground Turkey - 1/3 lb.
Minced Garlic - 2 tsp.
Salsa - 3 tbs.
Olive Oil - 2 tsp.
In large skillet, brown garlic and ground turkey. Add whatever seasoning you prefer. I used Old Bay.
Add cooked shrimp, canned tomatoes(undrained) and salsa. Stir together and bring to a boil.
Reduce heat and cover. Simmer for 10-12 min.
When rice is done, transfer to large bowl and fluff with a fork. Pour the skillet mixture over the rice and blend well.
Makes about 6 - 1 cup servings.
This recipe can easily be altered with added vegetables, different seafood, no seafood, no turkey etc.
