Black Beans and Rice

Ingredients

2 TBSP olive oil
1 onion
1 red bell pepper
3 garlic cloves
2 tsp cumin
1/2 tsp dry mustard
1 - 16 oz can tomatoes w/ juice
2 - 16 oz cans black beans (rinsed)
salt, pepper to taste
1 1/2 c white rice, cooked
Directions
Heat oil. Chop onion, add to oil. Chop pepper, then garlic, add each to pan. Add cumin & mustard. Chop tomatoes, add them (w/juice). Add black beans and seasonings as desired.
Cook 15 minutes or more.
Serve over rice.
