Chicken Pasta Primavera

Introduction

This recipe is from "The Carb Lovers Diet". I was very surprised how much I liked this and how filling it was with only 1 chicken breast and 1/2 cup of dry pasta for 2 people. This recipe is from "The Carb Lovers Diet". I was very surprised how much I liked this and how filling it was with only 1 chicken breast and 1/2 cup of dry pasta for 2 people.
Number of Servings: 2

Ingredients

    1/2 cup uncooked, whole grain rotini
    2 tsp extra virgin olive oil
    1 skinless, boneless chicken breast, about 5 oz, cut into chunks
    1 onion, chopped
    3 garlic cloves, minced
    1 tsp dried oregano
    1/8 tsp salt
    1/8 tsp pepper
    2 cups chopped tomato
    1 zucchini, sliced lengthwise into ribbons
    2 tbsp shredded parmesan cheese

Directions

Cook pasta acoording to package directions, omitting salt and fat. Drain.
Heat olive oil in a nonstick skillet over medium-high heat. Add chicken pieces, cook about 5-7 minutes or until chicken is cooked. Remove chicken from pan and set aside.
Add onion, garlic, oregano, salt, pepper, and tomato to pan. Cook about 8-10 minutes. Add zucchini ribbons during last minute or two of cooking. Add chicken and pasta, toss gently. Top with parmesan cheese.
Serves 2.
