Crock Pot BBQ Chicken

Introduction

This is an easy to fix dinner that is even perfect for company. I modified this from a Hungry Girl recipe. I generally eat if over a roll although my husband likes it on a tortilla. My friends like it just in a bowl! To complete the meal, I serve it with salad. Perfect comfort food! This is an easy to fix dinner that is even perfect for company. I modified this from a Hungry Girl recipe. I generally eat if over a roll although my husband likes it on a tortilla. My friends like it just in a bowl! To complete the meal, I serve it with salad. Ingredients

    1.5 pounds of boneless, skinless chicken breast
    1 cup of tomato sauce
    2 TBSP of brown sugar
    2 TBSP of cider vinegar
    4 TBSP of BBQ sauce (I use KC Masterpiece which is 60 calories for 2 TBSP).

Directions

--Combine all ingredients except chicken in the crockpot.
--Add chicken and cover with sauce.
--Cook on high for 3-4 hours or low for 7-8 hours (make sure chicken is completely cooked)
--When cooking is complete, pull chicken out and place in bowl.
--Pull the chicken apart using two forks (one to steady it and one to pull it
--Return the chicken to the crockpot and cover with sauce.
--Serve.
