Number of Servings: 12


    2 c unbleached flour
    1 tsp baking soda
    1/4 tsp kosher salt
    1 T vegetable shortening
    3/4 hot water


Combine flour, baking soda, and salt. Cut in shortening until mixture resembles coarse crumbs. Add hot water and mix until blended. I do this in a food processor.

On a floured surface divide into 12 portions and roll into balls. Let rest for 10 minutes.

Preheat a cast iron pan over medium-high heat. Roll out tortillas into circles and cook for 20 to 30 seconds per side, turning once, and being careful not to burn them.
