Introduction

A cold tomato soup, perfect for a hot day! A cold tomato soup, perfect for a hot day!
Number of Servings: 5

Ingredients

    3 medium tomatoes (the redder and riper the better), cut into chunks
    1 small cucumber, peeled and cut into chunks
    3 slices stale white bread, remove crusts, torn up
    1/4 cup extra virgin olive oil
    2 Tbsp sherry
    1 tsp minced garlic
    1 tsp sugar
    1/8 tsp black pepper
    1 cup water, cold

Directions

Combine all ingredients together in a blender, and blend until as smooth as you like. Add extra water, if desired. Refrigerate finished soup until cold, about 1 hour. If you want to eat your soup immediately, you may add ice cubes to the blender.

As directed, recipe yields 5 1-cup servings.
