Mom's Buttermilk Pancakes

Ingredients

    3 eggs
    1 2/3 cup buttermilk
    1 tsp. baking soda (dissolve in buttermilk)
    1 1/2 cup flour
    1 tsp. baking powder
    1/2 tsp. salt
    1 Tbsp. sugar
    3 Tbsp. canola oil

Directions

Beat eggs until fluffy. Add buttermilk mixture and combine. Add remaining ingredients and combine. Do not over mix. Using 1/2 cup dry measuring cup, portion pancakes.
